Basic chicken and rice in the pressure cooker

Wondering how to do chicken and rice in the same pot of your pressure cooker? In this video I show you how the same basic recipe can be used for a variety of different chicken and rice meals! Just 8 minutes in your pressure cooker, and you’ve got dinner!

Basic Chicken
Ingredients
* 2 Tablespoons of butter
* 1 cup of onion
* 1-2 tsp diced garlic
* 3 cups chicken broth
* 3 cups of rice (not instant)
* Salt and Pepper
* 2-3 cups of bite sized chicken
* Optional add-ins (see note below)

Instructions
* Set your pressure cooker to sauté/sear and add your butter. Once the butter is melted, add your onions and sauté until soft and translucent.
* Add in your garlic and sauté for 30 seconds
* Add your chicken broth and rice (make sure you have your rice ratios correct. When in doubt use 1:1.5 rice/water ratio, you can always evaporate the extra moisture, but it’s harder to add it back in). Mix well.
* Add in any add-ins at this point. Mix well.
* Salt and pepper your chicken and lay your cut chicken pieces on the top of your mixture in the pot. Do not stir.
* Seal and set for 8 minutes on high pressure.
* When the time is over, allow the pot to natural pressure release for 5-10 minutes before opening.

Optional Add-ins
Basic Creamy Chicken Ingredients:
* Juice of one lemon
* ½ cup of parmesan
Basic Mexican Chicken Ingredients:
* 1 taco seasoning packet
* 1 cup of salsa


Pressure Cooker Rice
Cal Rose
Rinse your rice until the water is clear. Drain. Add 1 cup of rice to 1 cup + 1 Tablespoon of water to your pot. Mix well. Set your pressure cooker to 8 minutes. Allow natural pressure to release 8 minutes before opening.

Basmati
Rinse your rice until the water is clear. Drain. Add 1 cup of rice to 1 cup of water to your pot. Mix well. Set your pressure cooker to 6 minutes. Allow natural pressure to release 10 minutes before opening.

Jasmine
Rinse your rice until the water is clear. Drain. Add 1 cup of rice to 1 cup of water to your pot. Mix well. Set your pressure cooker to 3 minutes. Allow natural pressure to release 10 minutes before opening.

Brown Rice
Do not rinse. Add 1 cup of rice to 1 cup of water to your pot. Mix well. Set your pressure cooker to 15 minutes. Allow natural pressure to release 5 minutes before opening.

Wild Rice
Rinse your rice until the water is clear. Drain. Add 1 cup of rice to 1 1/2 cups of water to your pot. Add a pinch of salt and 1 tsp olive oil. Mix well. Set your pressure cooker to 15 minutes.
Allow natural pressure to release for the full time (until button falls).

Trouble shooting: If your rice is too al dente, close the lid quickly and allow to sit for another 5 minutes or so. If your rice is still too wet, leave the pot open and allow to sit for another 5 minutes.
