Depression Cake (No eggs, no milk, no butter)
Chocolate Cake Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ tsp salt
- 1 tsp baking soda
- ⅓ cup unsweetened cocoa powder
- ⅓ cup cooking oil
- 1 Tbsp vinegar
- 1 tsp vanilla extract
- 1 cup water
Chocolate Icing Ingredients:
- 1 ½ cups powdered sugar
- ¼ cup cocoa powder
- 3 Tbsp water
- 1 tsp vanilla extract
Instructions
Making the Cake:
- Preheat your oven to 350ºF.
- In a large bowl, mix together the flour, sugar, salt, baking soda, and cocoa powder until well combined.
- In a liquid measuring cup, add 1 cup of water, then mix in the vanilla extract and vinegar.
- Pour the oil into the dry ingredients, followed by the water mixture.
- Stir until the batter is smooth and no dry flour remains.
- Transfer the batter into an 8×8″ or 9×9″ baking dish and bake for 35 minutes.
- Let the cake cool completely before making the icing.
Make the icing:
- In a bowl, combine powdered sugar, cocoa powder, and vanilla extract.
- Gradually add water while mixing with a hand mixer until the icing is pourable.
- Pour the icing over the cooled cake and spread evenly.
- Allow the icing to set before serving.
