Traditional Corned Beef & veggies in the Instant Pot

I absolutely love Corned Beef, and that is not just because I’m Irish, it’s because it’s amazing! And making it in the Instant Pot is soooo ideal! The beef comes out moist and tender and the veggies are cooked perfectly!

The only thing I would do differently afterwards is put the cabbage in last so it isn’t in the liquid for as long. Other than that, brilliant easy traditional meal!

How to cook Corned Beef in the Instant Pot:
Add your steamer rack to the instant pot.
Add your corned beef and spice packet into the pot (be sure to add all the brine too)
Add 5 cloves of garlic
Set your instant pot on manual, high pressure, for desired time for the weight of your beef– about 25-30m minutes per pound.
When it’s done, release the pressure and remove the meat to a covered dish.
Add thick cut carrots, bite sized potatoes, and quartered green cabbage (in that order) to the pot.
Set pot on high pressure for 5 minutes.
When it’s done, release the pressure and slice your meat.
Serve with mustard.
