Lemon Buddies (Lemon Puppy Chow) – Chex Cereal

My husband is a SUPER FAN of Muddy Buddies (or Puppy Chow) and I am a fan of lemon flavored everything, so when this recipe happened across my computer screen this week, I knew I needed to try it! This is a delicious lemon twist on that old favorite chocolate peanut butter Chex treat! And at first, my husband was like, “Yah, okay, it’s good.” But it’s so good, it’s addicting! He bypassed a second serving of dinner to have a bowl of these Lemon Buddies! But you don’t have to believe me… you should try it!

Ingredients
* 5 cups Rice Chex
* 4 cups Corn Chex
* 1 package (12oz) white baking chips
* 4 teaspoons grated lemon zest
* 2 tablespoons lemon juice
* ¼ cup butter, melted butter (warm)
* 1 ½ cups powdered sugar
* ¼ cup yellow coarse sugar, optional

Instructions
Place cereals in a large bowl.
Place chips in a microwave safe bowl and microwave one minute. Give it a stir and microwave in 15 seconds blasts until 75% of the chocolate is melted (the residual heat will continue to melt the chocolate). Immediately add the melted butter, the lemon zest, and juice. Stir until blended. (Microwaving another 15 seconds if needed). Pour over cereal; toss to coat. Add powdered sugar and optional coarse sugar; toss to coat. Spread onto waxed paper to cool. Store in an airtight container.
