Ratatouille is one of those dishes that almost everyone has heard of, but very few people have tried. So, in the name of adventure, I tried it! And, I’m actually quite impressed at how very easy this recipe was. It was a little fiddley, I will attest, but that was all made up for with the flavors. Since this video, I have made an option tweak of the addition of a can of tomatoes and green chilis for an extra punch, and two of the three of my kids said they were not a fan of eggplant, so I may option out for summer squash instead next time. That all being said, this is definitely one I will make again!
