Ultimate Chewy Oatmeal Cookie
Ingredients:
- 1 ¼ cup free oats
- 1 ¼ cup Flour
- ½ teaspoon salt
- ½ cup sweetened coconut, shredded
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- ¾ cup butter, melted
- ½ – ¾ cups chocolate chips
- Optional: ¼ cup walnuts
Instructions:
- Preheat the oven to 350 degrees.
- Line baking tray with parchment or silicone
- In a large bowl, combine dry ingredients.
- In a small bowl, add wet ingredients and mix.
- Pour wet ingredients into dry ingredients and mix.
- Refrigerate mixture for 20-30 minutes.
- Use a cookie scoop to make cookie dough balls. Put dough bake in the refrigerator between batches
- Put onto baking tray and bake for 10-12 minutes or until the middles aren’t pale any longer.
- Allow to cool on the pan before transferring to cooling rack to cool completely.
