Sourdough Soft Pretzels

Are you looking for ways to use your discard sourdough starter? This is it! This recipe only have one 45 minute rise and it's a great way to use up your sourdough! Crunchy on the outside, soft and delicious on the inside!

Ingredients
  

Pretzels

  • 198 g milk 3/4 cups + 2 Tablespoons
  • 227 g unfed/discard sourdough starter 1 cup
  • 361 g bread flour 3 cups
  • 14 g sugar 1 Tablespoon
  • 1 TBSP butter or veg oil melted
  • 7 g salt 1 1/2 teaspoons
  • 7 g instant yeast 2 teaspoons

Topping

  • 14 g sugar 1 Tablespoon
  • 28 g water 1 Tablespoons
  • pretzel salt kosher salt
  • 28 g melted butter --optional 2 Tablespoons

Instructions
 

  • Line two baking sheets with parchment or a silicone baking mat.
  • Add everything to your stand mixer (starting with wet) and mix well until you get a smooth, slightly sticky dough.
  • If the dough is too dry, add 1 tablespoon of water (or milk) at a time until it gets slightly sticky.
  • Cover the dough and allow it to rise for 45 minutes. Depending on the temperature of your kitchen, it may not rise much.
  • Preheat oven to 350.
  • Turn the dough out onto pastry mat and divide into 12 equal pieces.
  • Roll each piece into 18 inch ropes and shape into pretzels.
  • Dissolve sugar in water and brush over the pretzels. Top with salt.
  • Bake 25 minutes or until they are light golden brown.
  • Once out of the oven, brush with butter if desired. However, only butter if you are going to eat immediately.
