Line two baking sheets with parchment or a silicone baking mat.
Add everything to your stand mixer (starting with wet) and mix well until you get a smooth, slightly sticky dough.
If the dough is too dry, add 1 tablespoon of water (or milk) at a time until it gets slightly sticky.
Cover the dough and allow it to rise for 45 minutes. Depending on the temperature of your kitchen, it may not rise much.
Preheat oven to 350.
Turn the dough out onto pastry mat and divide into 12 equal pieces.
Roll each piece into 18 inch ropes and shape into pretzels.
Dissolve sugar in water and brush over the pretzels. Top with salt.
Bake 25 minutes or until they are light golden brown.
Once out of the oven, brush with butter if desired. However, only butter if you are going to eat immediately.
