Humdingers Cookie (12 Cookies of Christmas – Recipe 3)

Sweet and crunchy, these Humdingers are fantastic!! The Humdinger is our third recipe in The 12 Cookies of Christmas (and recommended to me by my friend Angelica). When she told me about this recipe, I had a hard time imagining how these would turn out, but I was super surprised that they were really easy to make and quite delicious!

Humdingers Cookie

INGREDIENTS

  • 1 stick of butter
  • ¾ cup of sugar
  • 8 oz of chopped dates (14-15 dates)
  • 1 tsp vanilla
  • 2 ½ cups rice krispies
  • 1 cup chopped nuts 
  • Powdered sugar for rolling

DIRECTIONS

  1. Using a silicone spatula, melt butter and sugar over low/medium heat stirring until combined (around 2 minutes).
  2. Add in dates and cook for about 5-7 minutes or until the mixture caramelizes.
  3. Remove from heat, add vanilla, Rice Krispies, and chosen nuts.
  4. Allow mixture to cool slightly before using a scoop to shape into uniform balls. 
  5. Roll each ball in powdered sugar.

    I meant to try these for Christmas of 2023, but did I? Of course not. Then I meant to make them for Christmas of 2024, but that didn’t happen, either. Today, I finally tried them and oh my gosh!!! These things are DELICIOUS! Even my husband, who doesn’t really like dates, liked them. I decided to be lazy and put them into a baking dish like a bar cookie, then drizzled some melted dark chocolate over the top for fun. Amazing; why this recipe isn’t in all the cookie cookbooks, I don’t know!! Thank you!
