Red Beans, Brown Rice, and Collards

#AECRoadTrip RECIPE SIX: Finds us down south in Louisiana! And while we did not have this recipe while we were there, as luck would have it, a friend of mine requested this when I got home! So I jumped at the chance to make this nutrient dense Louisiana Staple of a meal!

Side note: One of my cameras went on the fritz that day, so the intro was recorded days later, the meal itself uses a voice over, but the end scenes are THE DAY I tasted it for the first time. Another thing to mention, it was the hottest day of the year and our AC was having a tough time keeping up… thus I look like a hot mess… because I was one.
