Riced Cauliflower Couscous

Ingredients
  

  • 1-2 tbsp olive oil or bacon fat
  • 1/2 large onion, diced
  • 2-4 garlic cloves, mined
  • 1 head cauliflower, uncooked and riced
  • 1 bunch fresh spinach, chopped
  • 1/2 cup crumbled bacon
  • salt and pepper

Method
 

  1. Wash cauliflower well and place florets in a food processor. Blitz until it looks like rice.
  2. In a medium sauté pan, heat oil. Add garlic and onion and sauté on medium-low about 4-5 minutes or until you have some color.
  3. Add in cauliflower and sauté until al dente, 3-5 minutes.
  4. Add chopped spinach and bacon and sauté, about 2 minutes.
  5. Salt and Pepper to taste.
